Ingredients
1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
5 tablespoons plant-based butter spread or margarine
⅔ cups Splenda® Stevia Granulated Sweetener
1 large egg
½ cup plain Greek yogurt
2 teaspoons pure vanilla extract
1 cup mashed overly-ripe bananas
For the caramel topping:
½ cup plus 2 tablespoons Splenda® Sweetened Condensed Milk
½ teaspoon caramel extract
flaked sea salt, optional

Instructions
Preheat oven to 350ºF. Line an 8×8 pan with parchment paper and spray with nonstick cooking spray. Set aside.
Stir together flour, baking soda and salt. Set aside.
In a bowl, beat together butter and Splenda Stevia Sweetener until it comes together. Beat in egg until fully combined. Then beat in yogurt and vanilla. Stir in dry ingredients (mixture may be dry), then fold in mashed banana.
Pour mixture into prepared pan and smooth out on top. Bake for 22-25 minutes, until a toothpick inserted into the middle comes out clean. Remove and set aside to cool.
While bars are cooling, make caramel by adding Splenda Sweetened Condensed Milk to a nonstick skillet. Heat over medium, and stir continuously for 4-6 minutes until mixture gets slightly darker in color and reduces a bit. Remove from heat and vigorously stir in caramel extract.
Gently spread caramel over cooled banana bars. Sprinkle on a pinch of flaked salt as desired. Serve!
