Preheat oven to 350º F. Prepare an 8×8 pan by lining it with parchment paper or spraying it with nonstick cooking spray.
In a medium bowl, add egg, milk, pumpkin puree, Splenda Stevia and vanilla extract. Whisk well until everything is evenly combined.
Add oats, protein powder, pumpkin pie spice, cinnamon, baking powder, and salt. Stir everything together until it’s mixed well. Fold in chocolate chips.
Pour mixture into prepared pan, and smooth out evenly on top with a spatula. Sprinkle with a little more chocolate chips if desired.
Bake, uncovered, for 30 minutes until done in the middle. Remove and let cool for 10 minutes.
Cut into squares, and serve warm. Serve in bowls topped with toasted nuts, sliced bananas, berries, or warmed milk. Leftovers keep great in the refrigerator and enjoy within one week!
