Key Lime Pie

Instructions

  1. Preheat oven to 350ºF.
  2. In a bowl, mix together ingredients for the crust using a fork. Press mixture into a pie plate using your fingers, beginning around the sides and then pressing it evenly into the bottom to form the crust. Bake for 10 minutes. Remove and set aside.
  3. In a medium bowl, whisk together the ingredients for the filling: sweetened condensed milk, Greek yogurt, lime zest, juice, and vanilla extract. Pour into the crust and smooth out on top. Bake for 15 minutes, then remove and let cool.  Refrigerate until completely cool and set, about 3-4 hours.
  4. In a bowl, fold together whipped topping and lime zest. Pipe or scoop topping on to pie, and decorate with lime slices. Serve immediately and enjoy!
