Chocolate Cherry Chia Seed Pudding

Instructions

  1. In a bowl, whisk milk, cocoa powder, chia seeds, and 3 packets Splenda Stevia. Mix well to let the milk absorb all of the cocoa powder. Place in the refrigerator while you make the cherry jam.
  2. In a small saucepan, heat cherries to medium, adding 2 tablespoons water and 1 packet Splenda Stevia. Cook until it comes to a low boil, then smash the cherries against the side of the pan with the back of the a fork.  Cherries should become jam-like.  Remove from heat and let cool completely. If desired, place cherries in a mini food processor and chop them up into small bits.
  3. To assemble: using 2 small jars, divide up the chia mixture by placing ¾ cup of the chia mixture into each jar, dividing it up equally.  Then, top each with the cherry mixture.  Cover and refrigerate.
  4. If desired, top with a sprinkle of chocolate and a fresh cherry.  Enjoy immediately, or within 3 days.
