Applesauce Snacking Cake

Instructions

  1. Preheat oven to 350°F. Spray an 8” x 8” metal cake pan with cooking spray.
  2. In a small bowl, stir together flour, baking powder, baking soda, cinnamon, and ginger.
  3. In a mixing bowl using an electric mixer, beat margarine and molasses on high speed for about 1 minute.
  4. Add egg substitute and vanilla extract and mix on high speed for 30 seconds. Mixture will be liquid.
  5. Add Splenda Sweetener and mix on medium speed until very smooth, 1–2 minutes.
  6. Add flour mixture and applesauce and mix on low speed until thoroughly combined.
  7. Spread batter evenly into prepared pan and bake for 30 minutes. Let cool completely, then cut into squares.
