Gluten-Free Chocolate Chip Banana Bread

Instructions

  1. Preheat oven to 350ºF.
  2. In a medium bowl, whisk eggs with mashed banana, Greek yogurt and vanilla, until mixture is well-combined.
  3. Sprinkle in Splenda Magic Baker Sweetener, almond flour, ground flaxseed, baking soda, cinnamon, and salt. Fold in any add-ins if using.
  4. Pour into a bread pan sprayed with non-stick cooking spray, or lined with parchment paper.
  5. Bake for 30 minutes, then cover with tented foil to prevent the top from browning too quickly.
  6. Bake for another 45 minutes until a toothpick comes out of the center clean. Let sit for 30 minutes before slicing.
